Harvesting Raw Cashew Nuts

The journey begins with harvesting raw cashew nuts (RCN) from cashew trees. The cashew apple and nut are separated, and the raw nuts are sun-dried to reduce moisture content.

The Processing Steps

  1. Steaming: Raw nuts are steamed to soften the hard shell
  2. Shell Cutting: Specialized machines carefully cut the shells
  3. Kernel Extraction: Skilled workers extract the delicate kernels
  4. Drying: Kernels are dried to achieve optimal moisture
  5. Peeling: The thin testa skin is removed
  6. Grading: Kernels are sorted by size and quality
  7. Packaging: Final quality check and packaging

Quality Grades

Cashew kernels are graded based on size, color, and wholeness. Common grades include W240, W320, and W450, with W240 being the largest and most premium.
